1 tablespoon unsweetened cocoa powder, plus more for rolling
1/2 teaspoon pumpkin pie spice or cinnamon
2-3 tablespoons vanilla almond milk
1/2 cup sweetened shredded coconut, plus more for rolling
Fisher® Chef’s Naturals® Almonds or Walnuts, or pepitas, chopped
Directions
Combine Fisher® Chef’s Naturals Almond-Coconut Flour, dates, almond butter, 1 tablespoon cocoa, and pumpkin pie spice in small food processor; blend until well combined (mixture will be sandy).
Using on/off turns, blend in enough almond milk by tablespoons until mixture forms moist dough.
Add ½ cup coconut and pulse in just until combined.
Roll mixture into 16 balls using about 1 tablespoon mixture for each.
Roll balls in coconut, cocoa, or assorted nuts and/or seeds to coat.
Cover and refrigerate at least 4 hours for flavors to develop.Note: Can be refrigerated in an airtight container for up to 5 days.
