Loaded potatoes don’t have to be baked- they can be mashed, too! With Fisher® Pecan Halves in the mix, you can sprinkle in a crunchy, filling topping that you probably haven’t tried before!
1 1/2 pound Yukon Gold potatoes, cut into 1-inch pieces
3/4 cup milk
1 tablespoon butter
1 teaspoon salt
1/4 teaspoon ground white pepper
1/2 cup coarsely chopped Fisher® Chef’s Naturals Pecan Halves
3/4 cup cheddar cheese
1/4 cup chopped cooked bacon from about 4 slices
2 tablespoons sliced green onions
Place potatoes in a microwave safe bowl with a microwave safe cover or place in a covered casserole dish. Microwave on high 7 to 8 minutes or until potatoes are very tender when pierced with a paring knife.
Combine milk, butter, salt and pepper in a microwave safe measuring cup. Microwave on high 1 minute or until milk is hot.
Using a potato masher, mash potatoes, adding ¼ cup of milk at a time until the potatoes are mashed and the milk is incorporated. Stir in remaining ingredients. Serve immediately.
