- Heat oven to 325°F. Line cookie sheet with parchment paper.
- Mix Fisher® Almond Flour, sugar, baking powder and salt in large bowl. Stir in egg white and extracts until well blended and dough begins to form.
- Shape into 12 balls using moistened hands and arrange on prepared pan. Use thumb or greased teaspoon to make a slight indentation in center of each cookie. Fill each with a generous ½ teaspoon jam.
- Bake 13-15 minutes or until lightly browned and firm. Cool on pan 5 minutes. Remove to cooling rack.

Tips
Dough may be prepared 3 days ahead of time. Refrigerate in airtight container. When ready to bake, shape into balls and continue as directed.
