INGREDIENTS

1/2 cup
Fisher® Sliced Almonds, divided
1/4 cup
extra-virgin olive oil
1 tablespoon
chopped garlic
1 teaspoon
dried oregano
1 teaspoon
dried rosemary
1/2 teaspoon
table salt
1/4 teaspoon
ground black pepper
3-1/2 pounds
boneless leg of lamb, butterflied
2/3 cup
water or chicken broth

DIRECTIONS

  1. Heat oven to 450°F. Reserve ¼ cup Fisher® Almonds. Chop remaining almonds.
  2. Combine chopped nuts, oil, garlic and seasonings in small bowl. Arrange lamb on work surface with cut side up. Spread with half the oil mixture. Roll up from short end and secure with kitchen string at 2-inch intervals. Rub remaining oil mixture onto outside of lamb. Press reserved sliced nuts onto top of meat. Place in large roasting pan.
  3. Bake 20 minutes. Reduce oven temperature to 375°F. Pour water into pan. Bake 40-50 minutes or until internal temperature of lamb reaches 145°F. Let stand 15 minutes. Remove string before slicing.

Tips

Roasted fingerling potatoes make an excellent side dish.
