Honey Pecan Cod

Simplicity at its best- a full meal in a disposable packet for no cleanup. This recipe adds a bit of crunch and sweetness to a popular whitefish. It’s so easy and delicious, you’ll make it a regular for your household.

INGREDIENTS

cod fillets (about 1 pound)
2 tablespoons
honey
1 tablespoon
Dijon mustard
1/2 cup
Fisher® Honey Roasted Chopped Pecans

DIRECTIONS

  1. Heat oven to 425ºF. Prepare 4 large pieces of parchment paper. Fold each in half, then cut into a large heart shape. Place 1 cod fillet on one side of each parchment heart.
  2. Combine honey and mustard; spread onto fish. Sprinkle with Fisher® Pecans. Fold parchment over fish, then fold and crimp edges of parchment to create a packet. Arrange on large cookie sheet.
  3. Bake 25 minutes or until internal temperature reaches 145°F, or until fish is opaque and separates easily with a fork. Let stand 5 minutes before opening packets.

Tips

For an easy vegetable side dish, add ½ cup fresh spinach, chopped bell peppers or sliced zucchini to each packet. Place vegetables under fish and continue as directed.
