uncooked spaghetti
2 tablespoons
olive oil

pancetta, diced
1/3 cup

4 cloves
garlic, finely chopped
1/4 teaspoon
crushed red pepper
1/2 cup
white wine

eggs
1 cup
(4 ounces) freshly grated Parmesan cheese, divided
1/4 cup
chopped Italian parsley
Freshly ground black pepper

DIRECTIONS
- Cook pasta as directed on package.
- Meanwhile, heat oil in large skillet on medium heat. Add pancetta; cook 3-5 minutes or until crisp. Add Fisher® Walnuts, garlic and red pepper; cook and stir 1-2 minutes or until fragrant. Add wine; cook 2-3 minutes or until liquid is slightly reduced. Add drained pasta; toss to coat.
- Whisk eggs and ½ cup Parmesan in small bowl; add to pasta. Remove from heat. Toss until well coated and mixture reaches 160°F. Transfer to serving bowl.
- Sprinkle with parsley, black pepper and remaining ½ cup cheese. Serve immediately.
