INGREDIENTS

1 tablespoon
butter
1 pound
fresh mushrooms
1/2 cup
chopped onions
1/2 cup
uncooked white rice
4 cups
(1 quart) chicken or vegetable stock
1 cup
Fisher® Walnut Halves & Pieces, coarsely chopped
1/2 teaspoon
dried thyme
1/4 cup
heavy cream

DIRECTIONS

  1. Melt butter on medium-high heat in large saucepan; add mushrooms and onions. Cook about 5 minutes or until onions are soft, stirring occasionally. Stir in rice, stock, Fisher® Walnuts and thyme. Bring to boil then simmer on medium-low heat 15 minutes or until mushrooms are very soft.
  2. Puree soup in blender, working in batches if needed. Return to pot; add cream. Cook until heated through.

Tips

For an attractive garnish, sauté 1 sliced mushroom in additional melted butter until browned. Place 1 mushroom slice, an additional walnut half, and a small thyme sprig onto each serving.
