Sauteed Spinach with Almonds

Spinach is lean and clean, so try adding cheese or something else rich to round it out. The little bit of spice from the red pepper and a hint of garlic combined with the richness of the almonds and Parmesan makes this a tasty side dish with a quick cooking time.

INGREDIENTS

1 tablespoon
olive oil
1 clove
garlic, peeled
1/2 cup
Fisher® Sliced Almonds
1 pound
fresh spinach
1/4 teaspoon
kosher salt
1/8 teaspoon
crushed red pepper
1/4 cup
grated Parmesan cheese
1 tablespoon
lemon juice

DIRECTIONS

  1. Heat oil in large skillet on medium heat. Pierce garlic with the tines of a fork. When oil begins to smoke lightly, add Fisher® Almonds and stir with the fork 30 seconds or until lightly browned. (This gives a subtle garlic flavor.) Discard garlic.
  2. Gradually add handfuls of spinach to pan, adding more as it wilts. Add salt and pepper. Stir until spinach is completely cooked. Stir in cheese and lemon juice. Season to taste with additional lemon juice.
