Walnut Parfaits with Rum & Dark Chocolate

The combination of walnuts and dark chocolate pudding mimics the flavors of a brownie. The fruity notes from the raspberries and the lemony marmalade complete the picture with the crunchy nuts and chocolate. And these are fun to make! Layering and assembling them is something you can get the kids to do.

Pudding

milk
1/2 cup

3 ounces
semi-sweet baking chocolate, chopped
1 tablespoon
dark rum
1-1/2 tablespoons
vanilla
Nuts
1/2 cup
sugar
2 tablespoons
water
1 pinch
cream of tartar or 1/2 teaspoon white vinegar
3/4 cup
chopped Fisher® Walnut Halves & Pieces
1 cup
heavy cream
1/4 cup
lemon or orange marmalade
2 cups
fresh raspberries

DIRECTIONS

  1. For Pudding: Combine milk and sugar in large saucepan. Cook on medium heat until sugar is dissolved and mixture simmers, stirring frequently.
  2. Whisk egg yolks, cocoa and cornstarch in medium bowl until smooth. Gradually add warm milk mixture, whisking until blended. Return mixture to saucepan. Cook on medium heat 5-7 minutes or until thickened, stirring constantly. Remove from heat. Add remaining ingredients; stir until chocolate is melted. Spoon into clean bowl; cover with plastic wrap touching surface. Refrigerate until ready to use.
  3. For Nuts: Combine sugar, water and cream of tartar in small saucepan. Bring to boil on medium heat; cook until sugar is light brown in color. Stir in Fisher® Walnuts. Spoon onto baking sheet in single layer, using 2 forks to separate nuts. Season with salt. Cool completely.
  4. Whip cream to soft peaks. Spoon about ¼ cup Pudding into each of 6 serving glasses. Top with about 1 teaspoon marmalade, 2 tablespoons whipped cream, a few caramelized walnuts, and a few raspberries. Repeat layers. Serve immediately or refrigerate until ready to serve.

Tips

For an alcohol-free version, omit rum and increase vanilla to 2 teaspoons.
Substitute sliced or chopped strawberries for the raspberries.
