Using store-bought pastry makes this classic apple dessert quick and easy to prepare.


1 tablespoon
 butter
 2 small
 baking apples, peeled, cored and thinly sliced
 1/3 cup
 sugar, divided
 1/2 teaspoon
 lemon zest
 1 tablespoon
 lemon juice
 1/2 teaspoon
 vanilla
 1/4 teaspoon 
 ground cinnamon
 1 package
 (14.1 ounces) ready-to-use refrigerated pie crust
 3/4 cup
 Fisher® Sliced Almonds, divided
 1
 egg

DIRECTIONS
- Melt butter in large skillet on medium heat. Add apples, 3 tablespoons sugar, lemon zest and juice, vanilla and cinnamon. Cook 8-10 minutes or until apples are soft and tender, stirring occasionally. Cool completely
 - Heat oven to 400°F. Use 3-1/2-inch round cutter to cut out 8 circles from each pie crust, rerolling scraps if necessary to make 16 pieces. Place heaping tablespoonfuls of apple mixture in center of 8 circles; top each with 1 tablespoon Fisher® Almonds. Beat egg with 1 tablespoon water. Brush onto outer edge of dough. Top with remaining dough circles. Seal edges with fork. Arrange on parchment paper-lined cookie sheet. Brush tops with additional egg. Use sharp knife to cut 2 slits in center of each hand pie to allow steam to escape. Sprinkle with remaining nuts and sugar.
 - Bake 18-20 minutes or until golden brown. Cool slightly before serving.
