Have you heard about the trend that is Sweet Potato Toast? If not, you’re about to.

The idea is to use sweet potatoes as bread. Why? Well, for starters, sweet potatoes are packed with beta-carotene, which converts into vitamin A in our body. They’re also a perfect option if you’re gluten free or need to a little more fiber in your diet. Finally, when combined with other nutrient-rich toppings, you have the perfect meal or snack.

Perfect for the flavors of the fall season, our fresh twist on Sweet Potato Toast is done in three simple steps. Top it with your favorite cheese and Fisher® Pecans  and serve for breakfast, or as an appetizer!


Ingredients

  • 2 sweet potatoes
  • Cheese of choice
  • 6oz bag Fisher® Pecan Halves

Directions

  1. Preheat oven to 400 degrees.
  2. Coat your sweet potato slices with olive oil and place in the oven for 30-40 minutes.
  3. Top with your favorite cheese and Fisher® Pecans to compliment this versatile vegetable. Enjoy!
