Asparagus with Balsamic Vinaigrette & Almonds

Everybody’s favorite veggie just got a little better. Topped with a zesty balsamic dressing and sprinkled with Fisher® Sliced Almonds, this asparagus is sure to be a hit.

INGREDIENTS

1 pound
fresh asparagus, trimmed
4 teaspoons
balsamic vinegar
1 teaspoon
Dijon mustard
1 teaspoon
Dijon mustard
1/8 teaspoon
table salt
1/4 cup
olive oil
1/4 cup
Fisher® Sliced Almonds, toasted

DIRECTIONS

  1. Bring 1 inch of water to boil in medium skillet on high heat; add asparagus. Cook 3-4 minutes or until tender; drain. Rinse with cold water.
  2. Whisk vinegar, Dijon, honey, salt and a dash of ground black pepper in small bowl. Gradually whisk in oil until well blended.
  3. Arrange asparagus on serving platter. Drizzle with dressing and sprinkle with Fisher® Almonds

Tips

To toast almonds, heat dry skillet on medium-high heat. Cook almonds 3-5 minutes or until browned, stirring frequently. Cool.
Enjoy this side dish slightly warm or refrigerate asparagus after cooking until cooled.
