Beef Satay with Peanut Sauce

INGREDIENTS

1/2 cup
low-sodium soy sauce
1/2 teaspoon
ground ginger
1/2 teaspoon
garlic powder
1-1/2 pounds
beef top round or flank steak, cut into long strips

Fisher® Dry Roasted Peanuts, divided
1 teaspoon
vegetable oil
3 tablespoons
low-sodium soy sauce
2 tablespoons
lime juice
1 tablespoon
sugar
1 clove
garlic, chopped
1/8 teaspoon
crushed red pepper

DIRECTIONS

  1. For Skewers: Combine soy sauce, ginger, garlic and beef in large resealable bag. Refrigerate 1 to 3 hours to marinate. Meanwhile, soak skewers in water 30 minutes to prevent burning.
  2. Heat grill to medium-high. Thread beef onto skewers; discard marinade. Grill 2-3 minutes or until internal temperature reaches 145°F.
  3. For Peanut Sauce: Process 1 cup Fisher® Peanuts and oil in food processor until a smooth paste forms. Add remaining ingredients. Process until well blended. Add 2-3 tablespoons water to reach desired consistency.
  4. Chop remaining ¼ cup nuts. Stir into sauce. Serve with skewers.
