INGREDIENTS

8 medium
parsnips, trimmed, peeled, and halved lengthwise (about 2 pounds)
1 tablespoon
unsalted butter
½ cup
Fisher® Pecan Halves
½ teaspoon
ground cumin
¼ teaspoon
ground coriander
½ cup
maple syrup

DIRECTIONS

  1. Place parsnips in large deep skillet. Cover with about 1 inch of water. Bring to boil on high heat. Simmer on low heat 15-20 minutes or until tender, adding additional water if needed. Drain any excess liquid.
  2. Meanwhile, melt butter in small saucepan on medium-high heat. Add Fisher® Pecans and spices. Cook and stir 1 minute. Remove nuts from pan. Add maple syrup to pan; bring to boil. Simmer on low heat 5 minutes.
  3. Toss parsnips with maple syrup, sprinkle with nuts, and season with salt.
