INGREDIENTS

Crust
1-1/2 cups
graham cracker crumbs
1/4 cup
(½ stick) butter, melted
1/4 cup
sugar
1 teaspoon
ground cinnamon
1/2 teaspoon
ground nutmeg
1 cup
caramel ice cream topping, divided
3/4 cup
Fisher® Chef’s Naturals® Pecan Chips, divided
Cheesecake
2 packages
(8 ounces each) cream cheese, softened
2 tablespoons
flour, divided
1/2 cup
sugar

2 large
Gala apples, peeled, diced
1 teaspoon
ground cinnamon

DIRECTIONS

  1. For Crust: Heat oven to 350°F. Prepare 9-inch springform pan with nonstick spray.
  2. Combine graham crumbs, butter, sugar, cinnamon and nutmeg in medium bowl. Press firmly onto bottom and up side of pan.
  3. Bake 6-8 minutes or until golden brown. Pour ½ cup caramel topping onto warm crust. Top with ½ cup Fisher® Pecan Chips. Cool.
  4. For Cake: Beat cream cheese, 1 tablespoon flour and sugar in large bowl with electric mixer on medium-high speed until well blended. Add eggs; mix well.
  5. Combine apples, cinnamon and remaining 1 tablespoon flour in medium bowl. Gently stir into cheese mixture; pour into prepared crust.
  6. Bake 45 minutes. Pour remaining caramel topping over cheesecake. Bake 10-15 minutes or until center is set. Sprinkle with remaining nuts. Run knife around rim of pan to loosen cake. Cool, then refrigerate overnight.
