DIRECTIONS

  1. Heat oven to 375°F. Whisk sugar, oil, eggs, and vanilla in large bowl until well blended. Stir in remaining ingredients until a dense dough forms, using hands if necessary. Divide dough into 2 pieces with lightly floured hands.
  2. Shape each piece into 11x4-inch log on parchment paper-lined cookie sheet.
  3. Bake 25-30 minutes or until golden brown. Transfer dough to wire rack and cool 10 minutes. Use serrated knife to cut dough into ½-inch-thick diagonal slices. Arrange cookies, cut-sides up, on cookie sheet. Bake 10-15 minutes, flipping cookies halfway through, or until lightly toasted. Cool completely on wire rack.
