INGREDIENTS

chocolate wafer cookies, finely crushed
1 cup
Fisher® Pecan Chips, divided
3 tablespoons
butter, melted
1 pound
cream cheese, softened
8 ounches
white baking chocolate, finely chopped, melted
1 teaspoon
vanilla

eggs
2/3 cup
plus ¼ cup sugar, divided
1/2 cup
raspberry preserves

DIRECTIONS

  1. Heat oven to 350°F. Prepare 8x8-inch baking pan with nonstick spray.
  2. Combine cookie crumbs, ½ cup Fisher® Pecans and butter in small bowl. Press firmly onto bottom of prepared pan.
  3. Beat cream cheese, melted chocolate and vanilla in large bowl with electric mixer until smooth. Add eggs, 1 at a time, mixing well after each. Blend in 2/3 cup sugar. Pour over crust, smoothing top.
  4. Bake 25-30 minutes or until firm. Cool in pan 15 minutes.
  5. Microwave preserves in small microwaveable bowl 30 seconds or until runny. Spoon over dessert. Refrigerate 6 hours or until firm.
  6. Combine remaining ½ cup nuts and remaining ¼ cup sugar in small saucepan. Cook on medium heat until nuts are coated with melted sugar, stirring frequently. Cut dessert into bars then sprinkle with glazed nuts.
