Chocolate Pecan Whoopie Pies

Traditional whoopie pies are filled with frosting, not ice cream, but the texture of the soft cookie/cake against the richness of the ice cream and the crunch of the pecans is delicious. This is a great dessert for gatherings with family and friends because the pies are individual and because it is a simple dessert (that can double as a snack.) Whoopie pies represent some good old American fun! It’s great with any kind of ice cream.

INGREDIENTS

1/2 cup
(1 stick) unsalted butter, cut up
6 ounces
semi-sweet chocolate chips
1 ounce
unsweetened baking chocolate, coarsely chopped
3
eggs
1 cup
sugar
2 teaspoons
vanilla
1 cup
flour
1/3 cup
unsweetened cocoa powder
1/2 teaspoon
baking powder
1/2 teaspoon
kosher salt
1 quart
butter pecan ice cream, softened
1/2 cup
chopped Fisher® Pecan Halves

DIRECTIONS

  1. Heat oven to 375°F. Prepare 2 baking sheets with nonstick spray.
  2. Place butter and chocolate in large microwaveable bowl. Microwave on HIGH 60-90 seconds, stirring every 30 seconds until chocolate is melted. Let stand 5 minutes.
  3. Whisk eggs, sugar and vanilla in separate bowl until blended. Sift flour, cocoa, baking powder and salt into third bowl. Add egg mixture to chocolate mixture; mix well. Stir in flour mixture. Scoop scant quarter-cupfuls of batter onto prepared pan, keeping each rounded and about 2 inches in diameter.
  4. Bake 4-7 minutes or until cakes spring back when gently pressed in center. Cool on pans 10 minutes. Remove to wire rack; cool completely.
  5. Sandwich ½ cup ice cream between 2 cakes. Roll in Fisher® Pecans. Serve immediately or freeze until ready to serve.
