Cinnamon-Walnut Rice Pudding

INGREDIENTS

3/4 cup
uncooked white rice
3 cups
water
1 quart
(4 cups) half-and-half
2 eggs

sugar
1 teaspoon
vanilla
1/2 teaspoon
ground cinnamon
3/4 cup
chopped Fisher® Chef’s Naturals® Walnuts

DIRECTIONS

  1. Combine rice, water and a pinch of salt in large saucepan. Cook on medium heat 15 minutes or until rice is nearly dry, stirring occasionally. Stir in half-and-half; bring to boil. Simmer on low heat 15 minutes, stirring occasionally. Remove from heat.
  2. Combine eggs, sugar, vanilla and cinnamon in a medium bowl. Gradually stir in 1 cup of the hot rice mixture in 4 additions. Return to pot with remaining rice. Cook on low heat 1 minute or until mixture reaches a temperature of 165°F. Stir in Fisher® Walnuts. Spoon into clean bowl. Cover with greased parchment or waxed paper. Refrigerate until chilled.
  3. Serve sprinkled with additional cinnamon and nuts, if desired.
