Melted Marshmallow & Walnut Cookies

These are the ultimate cookies – chocolate chips, marshmallows, vanilla and Fisher® Walnuts all in one. So good, you might not want to share!

INGREDIENTS

1/2 cup
flour
1/2 teaspoon
baking powder
1/8 teaspoon
table salt
2 cups
semi-sweet chocolate chips, divided
2 tablespoons
unsalted butter
1
egg
1/2 cup
sugar
1/2 teaspoon
instant coffee dissolved in 1 teaspoon water
1/2 teaspoon
vanilla
1/2 cup
Fisher® Chopped Walnuts
2/3 cup
mini marshmallows

DIRECTIONS

  1. Heat oven to 350°F. Line 2 baking sheets with parchment paper.
  2. Whisk flour, baking powder and salt in small bowl.
  3. Combine 1 cup chocolate chips and butter in medium microwaveable bowl. Microwave on HIGH 1-2 minutes or until melted, stirring every 30 seconds.
  4. Whisk egg, sugar, coffee mixture and vanilla in large bowl until well blended. Stir in chocolate mixture until blended. Stir in flour mixture just until blended. Stir in Fisher® Walnuts and remaining chocolate chips.
  5. Drop rounded tablespoons of dough onto prepared pans, spacing 3 inches apart. Top each with about 5 marshmallows then gently press another tablespoon of dough to cover marshmallows and form 2-inch-high mounds.
  6. Bake 14 minutes or until tops of cookies feel dry and look crusty, rotating pans halfway.
