INGREDIENTS

1 pound
boneless skinless chicken breasts, sliced into 4 cutlets
1 tablespoon
olive oil
1 small
onion, finely chopped
2 cloves
garlic, finely chopped
1 teaspoon
lime zest
2/3 cup
lime juice
1/4 cup
light or white rum
1 cup
Fisher® Slivered Almonds, toasted, divided
Hot cooked rice, to serve
1/3 cup
chopped fresh mint leaves

DIRECTIONS

  1. Brown chicken in hot oil in skillet on medium-high heat. Add onions and garlic. Cook 7-8 minutes or until onions are tender, stirring occasionally. Stir in lime zest and juice. Remove pan from heat; carefully add rum. Return to medium-low heat and simmer until internal temperature of chicken reaches 165°F. Stir in half the Fisher® Almonds. Season to taste with salt and black pepper.
  2. Spoon rice onto serving platter. Top with chicken mixture. Garnish with mint and remaining nuts.

Tips

To toast almonds, place on ungreased baking sheet. Bake at 350°F for 10-15 minutes or until golden brown, stirring occasionally.
Serve with roasted or grilled asparagus for a complete meal.
