boneless skinless chicken breasts, sliced into 4 cutlets
1 tablespoon
olive oil
1 small
onion, finely chopped
2 cloves
garlic, finely chopped
1 teaspoon
lime zest
2/3 cup
lime juice
1/4 cup
light or white rum
1 cup
Fisher® Slivered Almonds, toasted, divided
Hot cooked rice, to serve
1/3 cup
chopped fresh mint leaves

DIRECTIONS
- Brown chicken in hot oil in skillet on medium-high heat. Add onions and garlic. Cook 7-8 minutes or until onions are tender, stirring occasionally. Stir in lime zest and juice. Remove pan from heat; carefully add rum. Return to medium-low heat and simmer until internal temperature of chicken reaches 165°F. Stir in half the Fisher® Almonds. Season to taste with salt and black pepper.
- Spoon rice onto serving platter. Top with chicken mixture. Garnish with mint and remaining nuts.

Tips
To toast almonds, place on ungreased baking sheet. Bake at 350°F for 10-15 minutes or until golden brown, stirring occasionally.
