INGREDIENTS

olive oil, divided
2 pounds
beef stew meat, cut into 1-1/2-inch cubes
1/2 teaspoon
table salt
1/4 teaspoon
ground black pepper
1 tablespoon
ground cumin
2 teaspoons
ground cinnamon
1 large
onion, chopped
2 large
carrots, chopped
2 cloves
garlic, chopped
1 cup
beef broth
1 can
(15 ounces) chickpeas, rinsed
3/4 cup
chopped Fisher® Walnut Halves & Pieces
1/2 cup
golden raisins
2 teaspoons
lemon zest, divided

DIRECTIONS

  1. Heat 1 tablespoon oil in large skillet on medium-high heat. Season beef with salt and pepper. Working in batches, brown beef on all sides, about 3 minutes per batch. Transfer to slow cooker insert. Season with cumin and cinnamon.
  2. Heat remaining 1 tablespoon oil in skillet on medium heat. Add onions, carrots, and garlic. Cook 5 minutes or until onions are translucent, stirring frequently. Transfer to slow cooker. Cover with broth, chickpeas, Fisher® Walnuts, raisins and 1 teaspoon zest.
  3. Cook on LOW 8 hours or until meat is tender and internal temperature reaches 160°F. Sprinkle with remaining zest before serving.

Serve with couscous, crusty bread or pita.
