Dressing
2 tablespoons
balsamic vinegar
1/2 teaspoon
Italian seasoning
1/4 teaspoon
table salt
1/8 teaspoon
ground black pepper
1/4 cup
extra-virgin olive oil
Salad
3 large
Roma tomatoes, sliced
1 medium
cucumber, peeled, sliced
4 ounces
bocconcini (mini mozzarella balls), drained, halved
1/4 cup
Fisher® Pine Nuts, toasted
4 ounces
Kalamata olives, halved
2 tablespoons
fresh basil leaves, thinly sliced

DIRECTIONS

  1. For Dressing: Whisk first 4 ingredients in medium bowl. Gradually whisk in oil until well blended.
  2. For Salad: Arrange tomatoes, cucumbers and mozzarella overlapping on serving plate. Top with Fisher® Pine Nuts, olives and basil. Drizzle with Dressing.

To toast pine nuts, cook in dry skillet on medium-low heat 3-5 minutes or until golden brown and fragrant, stirring frequently.
