No-Bake Grapefruit Bars

If you love cheesecake like us, try these No-Bake Grapefruit Bars. Perfect for the season, each bar is like a mini slice of heaven in your hand. No bake?  No problems.

These bars are completed with a crunchy  Fisher®  Pecan nut crust. Naturally gluten-free, it’s a great base for this tangy dessert, but a traditional crust will work well, too! The most challenging part of this recipe? Waiting for the bars to firm up before you gobble them down.    


  • Crust:

  • 2 cup Fisher® Pecans
  • 1/2 cup Unsalted Butter
  • 6 tbsp Sugar
  • 1/2 tsp Salt
  • Filling:

  • 8 oz Cream Cheese, at room temperature
  • 1 can sweetened condensed milk
  • 1/2 cup Freshly Squeezed Grapefruit Juice
  • 1 tbsp Grapefruit Zest
  • 1 cup Heavy Whipping Cream
  • 1 can Whipped Cream, for garnish
  • Grapefruit Slices, for garnish


  1. Crust: Chop pecans in food processor or blender. Melt butter and mix with nuts in a pie plate. Add sugar and salt to mixture. Pat into bottom of pie pan to form a crust shape.
  2. Filling: In a large bowl, beat the cream cheese with a hand-held mixer until smooth. Add sweetened condensed milk, grapefruit juice, grapefruit zest and mix until smooth. In another bowl, beat the heavy whipping cream until firm. Fold gently into the cream cheese mixture doing half at a time until barely combined. Spread evenly across the pecan crust. Allow at least 4 hours to set, or chill overnight if you’d like to make it ahead of time. Once firm, top with whipped cream and grapefruit slices. 
  3. Slice into bars and enjoy!

This sweet treat is perfect for any spring entertaining occasions.
