Toasted Almond Ceasar Salad

Give your Caesar salad a little extra crunch that goes way beyond ordinary croutons by adding Fisher® Sliced Almonds. If you want to plan ahead, you can make a bunch at once, and save them!

INGREDIENTS

1/2 cup
plus 2 tablespoons shredded Parmesan, divided
1/4 cup
Fisher® Chef’s Naturals® Sliced Almonds
1
anchovy filet
1 small clove
garlic
1/4 cup
mayonnaise
1/2 teaspoon
Worcestershire sauce
1/2 teaspoon
lemon juice
12 ounces
romaine lettuce hearts, cut crosswise into 1-inch strips

DIRECTIONS

  1. Heat oven to 350°F and prepare cookie sheet with nonstick spray.
  2. Combine ½ cup Parmesan and Fisher® Almonds in small bowl. Spread evenly onto prepared pan. Bake 10-12 minutes or until golden brown. Cool completely on pan. Carefully remove with metal spatula. Break into small pieces.
  3. Press anchovy and garlic through garlic press or finely chop with knife. Place in small bowl. Whisk in mayonnaise, Worcestershire, lemon juice and remaining 2 tbsp. Parmesan. Thin with 1 to 2 tablespoons water to reach desired consistency.
  4. Toss lettuce and dressing in large bowl. Arrange on serving platter. Top with almond crisps. Serve immediately.
