Chewy Almond Thumbprint Cookies

These cute jam-filled cookies are gluten free thanks to Fisher® Almond Flour. The dough can be made in advance, then baked whenever you need to brighten someone’s day.

INGREDIENTS

2 cups
Fisher® Chef’s Naturals® Almond Flour
1/3 cup
sugar
1-1/2 teaspoons
baking powder
1/4 teaspoon
table salt
1
egg white
1/2 teaspoon
almond extract
1/2 teaspoon
vanilla extract
1/4 cup
raspberry or other fruit jam

DIRECTIONS

  1. Heat oven to 325°F. Line cookie sheet with parchment paper.
  2. Mix Fisher® Almond Flour, sugar, baking powder and salt in large bowl. Stir in egg white and extracts until well blended and dough begins to form.
  3. Shape into 12 balls using moistened hands and arrange on prepared pan. Use thumb or greased teaspoon to make a slight indentation in center of each cookie. Fill each with a generous ½ teaspoon jam.
  4. Bake 13-15 minutes or until lightly browned and firm. Cool on pan 5 minutes. Remove to cooling rack.

Tips

Dough may be prepared 3 days ahead of time. Refrigerate in airtight container. When ready to bake, shape into balls and continue as directed.
