flour
1 tablespoon
baking powder
1 teaspoon
ground cinnamon
1/4 teaspoon
ground ginger
1/4 teaspoon
ground nutmeg
1/4 teaspoon
table salt
1/2 cup
(1 stick) unsalted butter, softened
1 cup
brown sugar

(15 ounces) pure pumpkin
1 cup

DIRECTIONS

  1. Heat oven to 375°F. Prepare muffin pans with nonstick spray or paper liners.
  2. Combine first 6 ingredients in large bowl. Beat butter and sugar in separate large bowl with electric mixer on high speed 2 minutes or until well blended and fluffy. Add eggs, 1 at a time, mixing well after each. Mix in pumpkin on low speed. Add flour mixture in 3 additions, mixing until smooth after each. Stir in Fisher® Walnuts. Spoon batter into prepared pans.
  3. Bake 25 minutes or until toothpick inserted in centers comes out clean. Cool in pans 10 minutes. Remove to wire racks; cool completely.
