Pear Frangipane Cake

Frangipane is somewhat a cross between cake and custard. In this recipe, it creates a soft and light almond-flavored cake which is topped with fresh pears.

INGREDIENTS

2-1/4 cups
Fisher® Chef’s Naturals® Almond Flour, plus more for pan
1/3 cup
gluten-free flour blend, plus more for pan
1-1/2 teaspoons
baking powder
1/2 teaspoon
table salt
1 cup
sugar
6 tablespoons
butter, softened

eggs
1 tablespoon
lemon zest
2 teaspoons
dark rum
1-1/2 teaspoons
vanilla extract
3/4 teaspoon
almond extract

ripe pear, sliced
2 tablespoons
Fisher® Sliced Almonds

DIRECTIONS

  1. Heat oven to 350°F. Line bottom of 9-inch cake pan with parchment paper. Grease side then dust with a mix of additional Fisher® Almond Flour and gluten-free flour blend.
  2. Mix first 4 ingredients in small bowl. Beat sugar and butter in separate large bowl with electric mixer until light in color and fluffy. Add eggs, zest, rum and extracts; beat until well blended. Add flour mixture; mix just until combined. Spoon into prepared pan.
  3. Arrange pear slices over top of batter; sprinkle with Fisher® Almonds.
  4. Bake 45-50 minutes or until toothpick inserted in center comes out clean. Cool completely in pan. Dust with powdered sugar before slicing, if desired.

Tips

Substitute all-purpose flour for the gluten-free blend.
