INGREDIENTS

4 cups
water
2 cups
red lentils, rinsed
2 tablespoons
chopped fresh ginger
1/4 teaspoon
table salt
1 teaspoon
vegetable oil
1 cup
finely chopped onions
1/4 cup
Fisher® Chopped Walnuts
1 teaspoon
chili powder
1 teaspoon
curry powder
1/4 cup
chopped fresh cilantro

DIRECTIONS

  1. Bring water, lentils, ginger and salt to boil in medium saucepan. Cook on medium heat 10 minutes or until lentils are tender. (Do not overcook.)
  2. Meanwhile, heat oil in medium skillet on medium heat. Add onions; cook and stir 5 minutes or until softened and browned. Stir in Fisher® Walnuts, chili powder and curry; cook 1 minute. Remove from heat.
  3. Add onion mixture and cilantro to lentils in pan; mix gently. Sprinkle with additional cilantro before serving, if desired.
