INGREDIENTS

DIRECTIONS

  1. For Cake: Heat oven to 350°F. Grease and flour bottom and side of 9-inch springform pan. Pulse 3/4 cup Fisher® Almonds, flour and 2 tablespoons granulated sugar in food processor until finely ground; set aside.
  2. Microwave chocolate and butter in large microwaveable bowl on 50% power 30 seconds; stir. Microwave in 30 second increments, stirring until completely melted. Cool.
  3. Beat egg yolks and remaining ¼ cup granulated sugar in large bowl with electric mixer until thick and pale yellow in color. Beat in chocolate mixture and almond extract. Gently stir in flour mixture using rubber spatula.
  4. Using clean beaters, beat egg whites in separate bowl on high speed until fluffy. Gradually add remaining granulated sugar, beating until stiff peaks form. Gently fold into chocolate mixture using rubber spatula. Spoon into prepared pan.
  5. Bake 45 minutes or until top is puffy and cracked, and toothpick inserted in center comes out with moist crumbs. Run knife around edge of pan to loosen; invert onto serving platter. Cool completely.
  6. For Topping: Combine ½ cup cream and powdered sugar in medium bowl. Whisk until soft peaks form. Microwave chocolate and remaining 1 tablespoon cream in small bowl on HIGH 15 seconds. Stir until chocolate is melted.
  7. Remove bottom and rim of pan. Top cake with whipped cream, drizzle with chocolate mixture and sprinkle with nuts.

Tips

To toast almonds, spread onto ungreased baking sheet. Bake in 350°F oven for 5-10 minutes or until golden brown, stirring occasionally. Cool completely.
