Quickie Goat Cheese & Pecan Bites

These are make-ahead and filled with flavor. Get these done, refrigerate and just pull them out shortly before serving. That’s my idea of a great thing to have on hand for any time, however big or small. Rolling the goat cheese in pecans, lemons and parsley also gives the tangy goat cheese the perfect companion: crunchy, toasty pecans. The freshness of the parsley and lemon zest serves as the perfect bridge for these ingredients. These are also naturally gluten-free which can nicely round out any hors d’oeuvre platter you are planning for any occasion.

INGREDIENTS

1 pound
goat cheese, softened
2 teaspoons
cracked black pepper
1/3 cup
Fisher® Pecan Halves, toasted, chopped
3 tablespoons
chopped Italian parsley
2
lemons, zested

DIRECTIONS

  1. Mix cheese and pepper in large bowl with until well blended. Combine remaining ingredients in separate bowl.
  2. Shape cheese mixture into 24 balls. Roll in nut mixture, pressing to adhere. Refrigerate until ready to serve.
  3. Let stand at room temperature 15 minutes before serving. If desired, drizzle with olive oil.

Tips

To toast pecans, spread onto ungreased baking sheet. Bake in 350°F oven for 7-8 minutes or until one shade darker in color, stirring occasionally.
Serve cheese balls on their own or with crackers, crostini or veggie dippers.
