INGREDIENTS

1 tablespoon
extra-virgin olive oil
1 teaspoon
yellow onion, chopped
1 teaspoon
kosher salt
1/2 teaspoon
paprika
1-1/2 cups
tri-color quinoa, rinsed
3-1/2 cups
water
1 cup
Fisher® Sliced Almonds, toasted, divided
2 tablespoons
fresh lemon juice

DIRECTIONS

  1. Heat oven to 350°F. Heat oil in ovenproof saucepan or Dutch oven on medium heat. Add onions, salt and paprika. Cook and stir 3-5 min. or until onions are translucent. Stir in quinoa. Cook 2 minutes or until you hear it “crackling.” Stir in water and ½ cup Fisher® Almonds. Bring to boil. Cover with lid.
  2. Bake 20-25 minutes or quinoa is fluffy and slightly separated. Fluff quinoa with fork and stir in lemon juice. Sprinkle with remaining nuts. Serve immediately.
