INGREDIENTS

1-1/2 cups
flour
1 cup
Fisher® Pecan Chips, divided
3/4 cup
Fisher® Dried Sweetened Cranberries
3/4 cup
old-fashioned oats
3/4 cup
brown sugar
1-1/2 teaspoons
baking powder
1/2 teaspoon
ground cinnamon
1 cup
milk or buttermilk
1/2 cup
vegetable oil
1
egg
1 teaspoon
vanilla

DIRECTIONS

  1. Heat oven to 400°F. Prepare 12-cup muffin pan with paper liners.
  2. Combine flour, ¾ cup Fisher® Pecans, cranberries, oats, sugar, baking powder and cinnamon in large bowl. Whisk milk, oil, egg and vanilla in separate bowl until well blended. Add milk mixture to flour mixture; stir just until combined. Spoon batter into prepared pan. Sprinkle muffins with remaining nuts.
  3. Bake 18-22 minutes or until toothpick inserted in centers comes out clean. Cool in pans 5 minutes. Remove to wire racks; cool completely.
