orange juice
4 teaspoons
low-sodium soy sauce
1 tablespoon
apple cider vinegar
1 tablespoon
sugar
2 teaspoons
cornstarch
2 tablespoons
peanut or vegetable oil

green onions, chopped
2 teaspoons
grated fresh ginger
2 cloves
garlic, finely chopped

red bell pepper, cut into 1-inch pieces
1 cup
broccoli florets
1/2 cup
sliced carrots
1 pound
large peeled & deveined raw shrimp
1/2 cup

1/2 teaspoon
toasted sesame oil
1/2 teaspoon
crushed red pepper

DIRECTIONS

  1. Whisk first 5 ingredients in bowl until well blended.
  2. Heat peanut oil in large skillet or wok on high heat. Add onions, ginger and garlic; stir briefly until fragrant. Add bell peppers, broccoli and carrots; stir-fry 2 minutes. Add shrimp; stir-fry 3 minutes or until flesh is pearly or white and opaque. Stir in sauce mixture; cook 1 minute or until slightly thickened. Stir in remaining ingredients.
  3. Serve over hot cooked rice or noodles, if desired.
