INGREDIENTS

4 pounds
beef tenderloin roast, trimmed
1 cup
Fisher® Walnut Halves & Pieces, chopped
1/2 cup
extra-virgin olive oil
1/2 cup
dry bread crumbs
2 cloves
garlic, grated
1 tablespoon
lemon zest
1 teaspoon
chopped fresh rosemary
1/4 teaspoon
kosher salt

DIRECTIONS

  1. Heat oven to 400°F. Place meat in roasting pan. Fold thin end under to allow for even cooking.
  2. Combine remaining ingredients in medium bowl. Press firmly onto top and sides of meat.
  3. Bake 35-40 minutes or until internal temperature reaches 145°F. Let stand 10 minutes before slicing.

Tips

Prepare using beef top round roast.
