Zucchini with Lemon-Almond Topping

A tasty side of zucchini can go with just about any entrée. So put a simple twist on this versatile veggie with some Fisher® Slivered Almonds, olive oil and a touch of garlic!

INGREDIENTS

1/2 cup
panko bread crumbs
1/4 cup
Fisher® Slivered Almonds
1 teaspoon
lemon zest
1/4 teaspoon
dried thyme
2 teaspoons
olive oil, divided
1 clove
garlic, finely chopped
2 pounds
zucchini, halved lengthwise, cut into 1/4-inch-thick slices
1/4 teaspoon
kosher salt

DIRECTIONS

  1. Heat broiler to HIGH. Combine panko, Fisher® Almonds, zest, thyme and ½ teaspoon oil in small bowl.
  2. Heat remaining 1-½ teaspoons oil in large ovenproof skillet on medium-high heat. Cook garlic 30 seconds or until fragrant. Add zucchini and salt; cook 10 minutes or until tender and beginning to brown, stirring occasionally. Top with almond mixture.
  3. Transfer skillet to oven. Broil 1-2 minutes or until topping is browned.
