INGREDIENTS

Crust:
1-1/2 cups
Fisher® Chopped Pecans
7 tablespoons
unsalted butter, melted
1/4 cup
packed dark brown sugar
1/8 teaspoon
table salt
1 cup
flour
Filling:
2
eggs, beaten
1/3 cup
light corn syrup
1.4 cup
packed dark brown sugar
3 tablespoons
bourbon
1/2 teaspoon
vanilla
1/8 teaspoon
table salt
1/3 cup
bittersweet or semi-sweet chocolate chips

DIRECTIONS

  1. Heat oven to 350°F. Arrange Fisher® Pecans on baking sheet; bake 8-10 minutes or until toasted and fragrant, stirring occasionally. Cool; set aside.
  2. For Crust:
  3. Line 8-inch square pan with foil, with ends extending over sides. Combine butter, brown sugar and salt in medium bowl. Stir in flour until a firm dough forms. Press onto bottom of prepared pan. Prick surface evenly with fork. Bake 20-25 minutes or until golden brown.
  4. For Filling:
  5. Whisk eggs, corn syrup, brown sugar, bourbon, vanilla and salt in medium bowl until blended. Stir in toasted nuts and chocolate chips; pour over warm crust.
  6. Bake 20-25 minutes or until center is set. Cool completely in pan on wire rack before cutting into bars.

Tips

Recipe can be prepared ahead of time. Cool completely, wrap tightly in plastic, and freeze for up to 2 months. Let stand at room temperature 15-20 minutes before cutting.
Substitute dark rum or brandy for the bourbon. For a non-alcoholic option, substitute 2 tablespoons orange or apple juice.
For perfectly sharp edges, refrigerate bars until firm before cutting.
