flour
1-1/2 teaspoons
baking powder
1/2 teaspoon
baking soda
1/2 teaspoon
table salt
1/2 cup
(1 stick) unsalted butter, softened
1 cup
sugar
1 teaspoon
orange zest

3/4 cup
fresh orange juice
3/4 cup
Fisher® Dried Sweetened Cranberries
1/2 cup
coarsely chopped Fisher® Walnuts

DIRECTIONS

  1. Heat oven to 350°F. Prepare 12-cup muffin pan with nonstick spray or paper liners.
  2. Mix first 4 ingredients in medium bowl. Beat butter, sugar and orange zest in separate large bowl with electric mixer on medium speed until well blended. Add egg; mix well. Alternately add flour mixture and orange juice, mixing on low speed after each addition until blended. Stir in Fisher® Cranberries and Walnuts. Spoon batter into prepared pan.
  3. Bake 25 minutes or until toothpick inserted in centers comes out clean. Cool in pan 5 minutes. Remove to wire rack; cool completely.

Tips

For a fresh twist, toast nuts before adding to batter.
