INGREDIENTS

1 cup
uncooked pearl (Israeli) couscous
2 tablespoons
olive oil
1/2 cup
chopped red onions
1/4 cup
chopped red bell peppers
1
carrot, chopped
1/2 cup
Fisher® Sliced Almonds, toasted
1/4 cup
raisins
1 teaspoon
ground turmeric
1/2 teaspoon
ground cinnamon
3 tablespoons
honey
1 tablespoon
Dijon mustard
1/2 teaspoon
lemon zest

DIRECTIONS

  1. Cook couscous in boiling water as directed on package; drain excess water. Fluff with fork.
  2. Meanwhile, heat oil in large skillet on medium heat. Add onions, peppers and carrots; cook and stir until softened. Add cooked couscous, Fisher® Almonds, raisins, turmeric and cinnamon; mix well. Season to taste with salt and ground black pepper.
  3. Combine remaining ingredients in small bowl; drizzle over couscous just before serving.

Tips

To toast almonds, spread onto ungreased baking sheet. Bake in 350°F oven for 10-15 minutes or until golden brown, stirring occasionally.
