INGREDIENTS

1-1/4 cups
all-purpose flour
3/4 cup
whole-wheat flour
1/2 teaspoon
ground cinnamon
1/2 teaspoon
baking soda
1/4 teaspoon
table salt
1/8 teaspoon
ground cloves
1/8 teaspoon
ground nutmeg
1 cup
vegetable oil
1-1/4 cups
sugar

eggs
2 cups
chopped peeled juicy apples (such as Honeycrisp)
1-1/4 cups
Fisher® Honey Roasted Chopped Pecans, divided

DIRECTIONS

  1. Heat oven to 350°F. Prepare muffin pans with nonstick spray or paper liners.
  2. Whisk first 7 ingredients in medium bowl. Whisk oil and sugar in separate large bowl until well blended. Add eggs, 1 at a time, mixing well after each. Add flour mixture; mix well. Stir in apples and 1/2 cup Fisher® Pecans. Spoon batter into prepared pans, filling cups about three-quarters full. Gently press about 2 teaspoons remaining nuts into each muffin.
  3. Bake 20-25 minutes or until toothpick inserted in centers comes out clean. Cool in pans 15 minutes. Remove to wire rack; cool completely.
