- Melt butter on medium-high heat in large saucepan; add mushrooms and onions. Cook about 5 minutes or until onions are soft, stirring occasionally. Stir in rice, stock, Fisher® Walnuts and thyme. Bring to boil then simmer on medium-low heat 15 minutes or until mushrooms are very soft.
- Puree soup in blender, working in batches if needed. Return to pot; add cream. Cook until heated through.

For an attractive garnish, sauté 1 sliced mushroom in additional melted butter until browned. Place 1 mushroom slice, an additional walnut half, and a small thyme sprig onto each serving.
