Salty-Sweet Maple-Glazed Delicata Squash

Delicata is a colorful winter squash with thin edible skin. When baked with a blend of toasted Fisher® nuts and a touch of sweetness, it becomes an excellent side dish with any meal.

INGREDIENTS

2 large
delicata squash, halved, seeded and cut into ½-inch-thick slices
4 tablespoons
salted butter, divided
2 tablespoons
olive oil
2 tablespoons
maple syrup
4 tablespoons
light brown sugar, divided
1/2 teaspoon
sea salt, divided
1/2 cup
Fisher® Whole Almonds, roughly chopped
1/2 cup
Fisher® Pecan Halves, roughly chopped
1/2 cup
Fisher® Walnut Halves & Pieces, roughly chopped
1/4 cup
Fisher® Raw Peanuts, roughly chopped
1/8 teaspoon
cayenne pepper

DIRECTIONS

  1. Heat oven to 375°F. Line large baking sheet with foil and coat with nonstick spray. Place squash in resealable plastic bag.
  2. Microwave 2 tablespoons butter, oil and maple syrup in small microwaveable bowl on HIGH 30 seconds or until butter is melted. Mix in 2 tablespoons sugar and ¼ teaspoon salt; pour over squash. Seal bag and shake to coat. Pour onto pan in even layer.
  3. Bake 30 minutes or until squash is tender. Adjust oven to broil. Broil 2-4 minutes or just until beginning to brown. (Watch carefully to prevent burning.)
  4. Meanwhile, combine all the Fisher® nuts in large dry skillet. Cook on medium-high heat 3-4 minutes or until toasted, stirring constantly. Add remaining 2 tablespoons butter, 2 tablespoons sugar, ¼ teaspoon salt and cayenne pepper. Mix well until butter is melted and nuts are coated.
  5. Combine squash and nut mixture in large serving bowl; mix gently.
