INGREDIENTS

1 cup
brown sugar
1/2 cup
vegetable oil
1
egg
1 cup
finely shredded zucchini (about 6 ounces)
1-1/2 cups
flour
1/2 cup
Fisher® Walnut Halves & Pieces, chopped
1 teaspoon
ground cinnamon
1 teaspoon
baking powder
1/2 teaspoon
baking soda
1/2 teaspoon
table salt
1/4 teaspoon
ground allspice

DIRECTIONS

  1. Heat oven to 350°F. Prepare 9x5-inch loaf pan with nonstick spray.
  2. Whisk sugar and oil in large bowl until well blended. Add remaining ingredients; stir until well blended. Spoon into prepared pan.
  3. Bake 50-60 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove bread from pan. Cool completely on wire rack.
