Blue Cheese Sun-dried Tomato Bruschetta

  • 1/4 cup olive oil
  • 1 garlic clove, minced
  • 8 ounces thin French bread cut into 12 slices
  • 4 ounces cream cheese
  • 1/2 cup blue cheese crumbles
  • 1/4 cup chopped sun-dried tomatoes
  • 1/4 cup chopped Fisher® Chef's Naturals Walnuts
  • 1/4 cup thinly sliced basil leaves


  1. Preheat broiler.
  2. Combine olive oil and garlic in a small bowl. Brush both sides of each slice of bread with garlic oil. Place bread slices on a cookie sheet. Toast bread under the broiler, turning each slice over after it has browned. Brown on the second side.
  3. Place cream cheese in a small microwavable bowl. Microwave on HIGH 30 seconds or until very soft. Stir in blue cheese. Spread blue cheese mixture one side of the bread pieces (about 1 tbsp. per piece). Top cheese layer with sun-dried tomatoes, walnuts and basil. Drizzle with any remaining garlic oil. Serve immediately.
