  • 1 1/4 cup finely chopped Fisher® Deluxe Cashews, divided
  • 1 1/4 cup panko Japanese breadcrumbs, divided
  • 3 tablespoons olive oil
  • 1/4 cup finely minced onion
  • 2 garlic cloves, finely minced
  • 1 teaspoon orange zest
  • 1/2 teaspoon ground ginger
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup milk
  • 1 egg, slightly beaten
  • 1 package (20 oz.) lean ground turkey

  1. Preheat oven to 375°F. Combine ¾ cup cashews and ¾ cup panko breadcrumbs in a medium bowl and set aside. Line a cookie sheet with aluminum foil, coat lightly with non-stick cooking spray.
  2. Stir together olive oil, onion, garlic, orange zest, ginger, salt, pepper, milk, egg and remaining ½ cup panko breadcrumbs. Stir in turkey and remaining ½ cup cashews until just mixed.
  3. Measure meatballs into 36 using a small ice cream scoop and roll between your hands to form round balls. Wash your hands with soap and water after touching raw meat.
  4. Roll meatballs in the cashew/panko breadcrumb mixture and place them on the prepared cookie sheet. Bake until internal temperature reaches 165°F with a food thermometer, 10 minutes.
  5. Note: Serve with teriyaki baste and glaze, if desired.
