You’ll find these crunchy, flavorful bites on the heartier side of appetizers. With ground turkey and Fisher® Deluxe Cashews, these pop-able treats will be a treat for dinner parties, tailgating or any group. Skewer them or eat them by the handful!
Ingredients
1 1/4 cup finely chopped Fisher® Deluxe Cashews, divided
1 1/4 cup panko Japanese breadcrumbs, divided
3 tablespoons olive oil
1/4 cup finely minced onion
2 garlic cloves, finely minced
1 teaspoon orange zest
1/2 teaspoon ground ginger
1 teaspoon salt
1/4 teaspoon black pepper
1/4 cup milk
1 egg, slightly beaten
1 package (20 oz.) lean ground turkey
Directions
Preheat oven to 375°F. Combine ¾ cup cashews and ¾ cup panko breadcrumbs in a medium bowl and set aside. Line a cookie sheet with aluminum foil, coat lightly with non-stick cooking spray.
Stir together olive oil, onion, garlic, orange zest, ginger, salt, pepper, milk, egg and remaining ½ cup panko breadcrumbs. Stir in turkey and remaining ½ cup cashews until just mixed.
Measure meatballs into 36 using a small ice cream scoop and roll between your hands to form round balls. Wash your hands with soap and water after touching raw meat.
Roll meatballs in the cashew/panko breadcrumb mixture and place them on the prepared cookie sheet. Bake until internal temperature reaches 165°F with a food thermometer, 10 minutes.
Note: Serve with teriyaki baste and glaze, if desired.
