Serve this easy and elegant appetizer at cocktail or dinner parties during the holidays.
Ingredients
Roasted Figs:
8 fresh figs, quartered lengthwise
2 tablespoons honey
2 tablespoons balsamic vinegar
1 tablespoon olive oil
2 teaspoons granulated sugar
Crostini:
1 cup goat cheese, at room temperature
2 tablespoons chopped chives, divided
32 slices baguette (about 1/2-inch thick slices)
2 tablespoons olive oil
1/3 cupFisher® slivered almonds, toasted
For food safety, gently rub produce under cold running water.
Directions
Roasted Figs: Preheat oven to 400°F. Toss together figs, honey, vinegar, oil and sugar; arrange in single layer in small baking dish. Roast for 10 to 12 minutes or until soft and tender and lightly caramelized.
Crostini: Preheat broiler. Brush both sides of baguette slices with oil; arrange on large baking sheet. Broil for 60 to 70 seconds per side or until lightly golden.
Mix goat cheese with half of the chives; spread over crostini to cover entire surface of baguette slice. Top with piece of roasted fig, slivered almonds and sprinkle of chives.
Tip: Add 1 teaspoon finely chopped fresh thyme or rosemary to figs before roasting if desired.
