Baked Coconut Pecan Granola

  • 2 cups rolled oats
  • 1 cup Fisher® Chef’s Naturals Pecan Halves, roughly chopped
  • 2/3 cup Fisher® Chef’s Naturals Pecan Flour
  • 1/3 cup unsweetened shredded coconut
  • 1/4 cup flaxseed meal
  • 3 tablespoons coconut sugar (or light brown sugar)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup maple syrup
  • 1/2 cup coconut oil, melted
  • 1 teaspoon vanilla extract


  1. Preheat oven to 300°F. Line baking sheet with parchment paper. 
  2. In large mixing bowl, combine all dry ingredients. Toss until well combined. 
  3. Add maple syrup, coconut oil, and vanilla extract. Stir until well combined.
  4. Transfer granola mixture to prepared baking sheet and press down firmly, packing together. 
  5. Bake until golden brown and firm to the touch, 35 to 40 minutes, rotating baking sheet halfway through.
  6. Cool completely in pan before breaking into clumps.
