Ingredients
1 cup dried cherries
1/4 cup cherry or orange juice
1 3/4 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 cup (1 stick) salted butter, softened
3/4 cup granulated sugar
2 eggs
1/2 cup sour cream
1/2 teaspoon almond extract
3/4 cupFisher® Chef’s Naturals Slivered Almonds
1/2 cup sweetened flaked coconut
Directions
Preheat oven to 350°F. Spray four mini loaf pans with no-stick cooking spray; set aside.
In small bowl, place cherries and juice together.
In medium bowl combine flour, baking powder and baking soda; mix well
In a large bowl, use electric mixer to cream butter and sugar. Add eggs, sour cream and almond extract. Gradually add flour mixture to butter; mix well.
Thoroughly drain juice from cherries. Fold in drained cherries and almonds.
Spread batter equally in prepared pans; sprinkle with coconut.
Bake 28 to 32 minutes or until toothpick inserted in center is clean when removed. Remove to cooling rack; cool completely.
