Crispy Grain-Free Pecan Waffles

Ingredients

  • 3 cups Fisher® Chef’s Naturals Pecan Flour
  • 1/2 cup tapioca starch (can substitute cornstarch or potato starch)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 eggs, separated
  • 1/4 cup granulated sugar
  • 1 cup whole milk (or milk of choice)
  • 4 tablespoons butter, melted
  • cooking spray

Directions

  1. Preheat waffle iron to a medium high setting, according to manufacturer's instructions. 
  2. Combine Fisher® Chef’s Naturals Pecan Flour, tapioca starch, baking powder, and salt in large bowl and whisk together.
  3. Using stand mixer or hand mixer, whip egg whites with sugar until stiff peaks form and whites are glossy, about 5 minutes.
  4. Combine  milk and egg yolks and gradually whisk into flour mixture. Stir in melted butter. 
  5. Add a small scoop of whipped egg whites to batter and fold gently, taking care not to over mix. Gently fold in remaining egg whites.
  6. Lightly spray waffle iron plates with cooking spray, and scoop in some batter (depending on manufacturer’s directions). Press iron.
  7. Cook according to manufacturer’s instructions, about 5 minutes, or until crispy and dark golden brown.
  8. Serve immediately with desired toppings, or hold in 200°F oven until ready to serve.
