1/2 cup chopped Fisher® Chef’s Naturals Pecan Halves
1/2 cup sugar
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1 egg
3/4 cup milk
4 tablespoons stick butter, melted
1 teaspoon grated lemon zest
1 teaspoon vanilla
1 1/4 cup chopped peeled pears
Directions
Heat oven to 375°F. Spray 24 mini muffin cups with nonstick cooking spray.
Lightly spoon flour into measuring cup; level off. Combine flour, pecans, sugar, baking powder and salt in a medium bowl; mix well.
In small bowl, beat egg; stir in milk, butter, lemon zest and vanilla until thoroughly mixed. Stir in pears. Add to dry ingredients; stir just until combined. Spoon batter into muffin pans.
Bake at 375°F. for 10 to 13 minutes or until muffins are golden brown and toothpick inserted in center comes out clean. Serve warm.
