Pear Pecan Mini Muffins

Ingredients

  • 1 3/4 cup all-purpose flour
  • 1/2 cup chopped Fisher® Chef’s Naturals Pecan Halves
  • 1/2 cup sugar
  • 1 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 3/4 cup milk
  • 4 tablespoons stick butter, melted
  • 1 teaspoon grated lemon zest
  • 1 teaspoon vanilla
  • 1 1/4 cup chopped peeled pears

Directions

  1. Heat oven to 375°F. Spray 24 mini muffin cups with nonstick cooking spray.
  2. Lightly spoon flour into measuring cup; level off. Combine flour, pecans, sugar, baking powder and salt in a medium bowl; mix well.
  3. In small bowl, beat egg; stir in milk, butter, lemon zest and vanilla until thoroughly mixed. Stir in pears. Add to dry ingredients; stir just until combined. Spoon batter into muffin pans.
  4. Bake at 375°F. for 10 to 13 minutes or until muffins are golden brown and toothpick inserted in center comes out clean. Serve warm.
